Let's give the world a taste of Portuguese talent

The Local Stars project aims to elevate your onboard experience and showcase new Portuguese talent to the world, honoring the richness of our country's cuisine.

We invited six talents from Portuguese gastronomy, who work in kitchens from the north to the south of the country. Each of the Chefs will create two complete menus, which will be available in our Business Class (on long-haul flights departing from Lisbon) for two months each.

From August to November, Chef Marco Almeida

During these four months, Chef Marco Almeida will fly higher while displaying innovation and diversity in each of his menus.

With characteristic determination, he opened his own restaurant – O Palco, 3 years ago. He chose the city of Coimbra for this debut, and the space has been recommended by the Michelin Guide since 2024. Only local and seasonal produce is used in his kitchen, and his focus is on good practices and the quality of each product.

  • Talent: Marco Almeida defines cooking as a spectacle. Through each ingredient, he learns about the producers' process and designs each dish with a passion for his art

August and September Menu

  • Starter: Rio Crayfish Pastry, Garlic Mayonnaise, Cabbage Salad
  • Main Course: Cod Fish, Stew Sauce, and Sweet Potato
  • Dessert: Citrus Rice Pudding, Crumble, and White Chocolate

October and November Menu

  • Starter: Smoked Eel and Gazpacho
  • Main Course: Duck Confit, Rustic Potatoes, Asparagus and Orange
  • Dessert: Bread and Rose Pudding – inspired by the legend of Queen Elizabeth of Portugal – “The Miracle of the Roses”
